Penny’s Stuffed
Croissant French Toast
6 Fresh Croissants from your favorite local independent bakery
6 Large eggs
¾ Cup of Milk
¼ tsp. Cinnamon Extract or Cinnamon Powder
¼ Cup of Vegetable Oil
½ tsp. Vanilla
Fresh Blackberries and Strawberries for garnish
Filling:
2 Cups Whipped or Softened Cream Cheese
Your choice of fruit filling
Apple Pie filling
Cherry Pie filling
Peanut Butter (natural)
Chocolate Chips (for garnish)
Directions:
Heat griddle or frying pan to medium heat with the vegetable oil. Beat eggs, milk cinnamon extract and vanilla extract all together. Split croissants in half, then dip in egg mixture.
Grill until brown on both sides, then spread bottom half of croissants with some of the whipped cream cheese while in hot pan. Top with your favorite fruit filling, then place the top croissant on, and serve with fresh berries and whipped cream. Drizzle with maple syrup and garnish with fresh fruit.
Note: If making stuffed peanut butter croissants, omit the cream cheese!
